Green Chicken Enchilada Soup

I got this recipe from Molly W., aka Biografitti Designs back in our ScrapArtist days. I've made it a few times for several pot lucks and it was a hit each time. I love that it's really easy to make. The original recipe makes a real big batch so I prefer to halve the recipe.
I shared this recipe with our Mom's group for our recipe exchange. Our theme this year was one-pot meals. This was perfect, of course!
Here is the recipe that I've tweaked to lessen the spiciness. The kids don't do spicy.
1/2 rotisserie chicken, shredded
1 can black beans
1 can pinto beans
1 can diced tomatoes
1/2  bottle green salsa or green taco sauce
1 32 oz carton of chicken broth
1 8oz brick of cream cheese
1 bag frozen sweet white corn

Mix the first 6 ingredients together in a big pot. Heat thoroughly. Add the cream cheese. Once completely melted, add corn. Serve with tortilla chips.

It was a simple celebration at Shakey's after church. The kids played in the arcade. We had some yummy pizza and mojos. It does not take much to please me. All I really want is to feel special.

About This Blog

This project began as a challenge to record my family's daily life for a year by taking one photo a day. It was not as successful as I wanted it to be.
After taking off for about a year, I am embarking on this photographic journey once more. I hope that these pictures will be visual cues to the memories we've built together as a family.
