Green Chicken Enchilada Soup

I got this recipe from Molly W., aka Biografitti Designs back in our ScrapArtist days. I've made it a few times for several pot lucks and it was a hit each time. I love that it's really easy to make. The original recipe makes a real big batch so I prefer to halve the recipe.
I shared this recipe with our Mom's group for our recipe exchange. Our theme this year was one-pot meals. This was perfect, of course!
Here is the recipe that I've tweaked to lessen the spiciness. The kids don't do spicy.
1/2 rotisserie chicken, shredded
1 can black beans
1 can pinto beans
1 can diced tomatoes
1/2 bottle green salsa or green taco sauce
1 32 oz carton of chicken broth
1 8oz brick of cream cheese
1 bag frozen sweet white corn
Mix the first 6 ingredients together in a big pot. Heat thoroughly. Add the cream cheese. Once completely melted, add corn. Serve with tortilla chips. Read more...

His diorama for his California Missions class at co-op. We had initially planned (and even bought the supplies) on doing a bigger piece using foam board, etc. Even if he was the one to make it, I felt it was going to be a lot of work supervising him. Thankfully, I googled and searched on the net and found this paper model. Much easier! We printed it out. He cut them, put them together and glued them up. Minimal help and supervision from Mom! My kind of project. :)

A friend of the girls celebrated her 8th birthday at Jollibee. I have not been to a Jollibee party for the longest time. When I was teaching preschool in Manila, our kids would often celebrate their birthdays in class with a Jollibee party. Fun day for the kids. Fun day for the teachers, especially when we get to eat Jolly spaghetti or Chicken Joy too. Yum!
